Quarter Cake
31 January 2007This is a great recipe for when it’s only you and a guest.
Quarter Cake
1 egg
2 tablespoons oil
1/4 cup water
1 cup yellow cake mix, any brand calling for 2 eggs and 1-1/3 cups of liquid.
Preheat oven to 350F. Line a 7″x3″ loaf pan with wax paper. Beat egg in medium bowl. Beat in oil and water. Stir in cake mix to moisten. Whip 1 to 1-1/2 minutes until smooth. Pour into prepared pan. Bake 25 mins until edges separate from pan and cake springs back when lightly touched n center. Cool in pan 15 minutes. Remove by lifting ends of wax paper. Cool on wire rack.
Makes 3-4 servings
Variations:
Chocolate Chip Cake: Finely chop 2 tablespoon of chocolate chips and stir into mix.
Cherry Cake: Finely chop 6 maraschino cherries to make 2 tablespoons, Stir into mix.
Nut Cake: Stir in 2 tablespoons of finely chopped nuts.
Lemon or Orange Cake: Stir in 1/2 teaspoon grated lemon or orange peel.
I got this recipe from a book called Cookery for 1 or 2 by Barbara Swain. The entire paperback contains recipes for 1 or 2 people and is wonderful. I’ll add more recipes as time goes on.
